Hello dear readers!
Summer has been an exciting time here for the Kitchen Bitch aka The Delish Dish, and I’m excited to share with you my first comprehensive catering/personal chef menu, with everything from Brie en Croute to Double Chocolate Bundt Cake.

This menu is just a starting point—all of my meals are custom made to your specifications—and this menu showcases just a few of my seasonal specialties. So please, take a moment to see what delicious things I have in store for you during these last few weeks of summer. You won’t be disappointed!!!

 LATE SUMMER MENU 2012

This menu is only just a starting point. The Delish Dish is happy to customize all menus. All condiment and sauces are prepared by hand and can always be altered to fit your needs and wants. Just ask!

*Items marked with an asterisk can be prepared ahead of time and delivered to you. I’m happy to prepare and serve all items listed here, as well as any you may request.

 

APPETIZERS

*Brie En Croute: Triple-cream Brie smothered in either homemade Dijon or homemade jelly and wrapped in puff pastry.

*Cherry Tomatoes Stuffed with Marinated Feta.  A Greek favorite.

*Chicken Liver Mousse: A delicious homemade chicken liver mousse made with fresh apples. Served with toasted baguette and red onion marmalade.

Cucumber Rounds with Smoked Salmon Mousse: Delicate cucumber rounds topped with smoked salmon mousse.

Delish Dish Signature Crostini: Individual toasts spread with a blue cheese mousse and topped with house-made pear chutney and toasted pecans. Flavor like you’ve never experienced before!

*Endive with Seasonal Vegetable Puree: Elegant endive leaves filled with a seasonal vegetable puree.

*Green Eggs & Ham: Deviled Eggs with homemade mayonnaise, assorted fresh herbs, and ham steak. A Delish Dish favorite!

*Lemon Hummus: Available in traditional, preserved lemon, or roasted red pepper flavors. Served with Stacy’s Pita Chips.

*Italian White Bean Dip: Cannellini beans, rosemary, thyme, and preserved lemon make this an excellent party snack. Served with Stacy’s Pita Chips.

*Marinated Olives: Preserved lemons, garlic, and fresh herbs enhance this beloved bar snack.

*Minted Melon Balls: Spanish melon and cantaloupe tossed with a brandy and mint vinaigrette. Perfect for summer nights!

*Parmesan Straws: Puff pastry rolled with herbs and parmesan and baked until crispy. A great snack food!

*Prosciutto-Wrapped Asparagus. Dry-cured ham wrapped around tender asparagus. An Italian classic.

*Scallop Ceviche Served in lettuce leaves or with tortilla chips. Perfect for summer. A Delish Dish favorite!

Stuffed Red Potatoes: Red potatoes make great single serving appetizers! Available with sour cream and chives; cheddar and bacon; or with corned beef and cheddar (aka The Irish ‘Tater).

*Vietnamese Summer Rolls: Rice noodles, shrimp or tofu, and fresh veggies wrapped in rice paper and served with an Asian dipping sauce.

SANDWICHES

*Braised Beef Brisket with homemade bourbon BBQ sauce on honey buns.

*Braised Beef Brisket with Bourbon-Peach Glaze: Brisket braised with beer, bourbon, and vegetables, then broiled and glaze with a bourbon-peach sauce. A Delish Dish favorite!

*Espresso-Maple Pulled Pork: Coffee-and-spice-rubbed pork shoulder that’s braised, and tossed with a tangy homemade BBQ sauce on a honey bun. A Delish Dish favorite!

*Classic Pulled Pork Sandwiches with Honey BBQ Sauce and Homemade Pickles on a Honey Bun.

*Apple Cider Pulled Chicken with Apple Slaw on Honey Buns.

*Buffalo-Style Pulled Chicken Sandwiches with Scallion-Blue Cheese Mousse and Pickled Carrots on a Honey Bun. Served with Celery Sticks. A Delish Dish favorite!

Classic Italian Beef Meatballs with Homemade Marinara, Mozzarella, and Basil on a Sub Roll

Sausage and Beef Meatballs with Homemade Vodka Sauce, Spinach, and Provolone on a Sub Roll (Mildly spicy)

Garlic and Jalapeno Sliders: Mini beef patties stuffed with garlic and jalapenos. Served with a creamy tomatillo sauce.

 WRAPS*

Cranberry-Turkey Wrap: Smoked turkey, mozzarella, mustard-mayonnaise, spring greens, dried cranberries and apricots.

Grilled Veggie Wrap: Homemade preserved lemon hummus, eggplant, zucchini, tomato, and goat cheese.

Mediterranean Tuna Wrap: Albacore tuna, olives, lemon zest, parsley, mixed greens, tomatoes, & red wine vinaigrette.

Roast Beef Wrap: Tender roast beef, dill slaw, and Havarti cheese.

Santa Fe Chicken Wrap: Roasted chicken, creamy cheese spread, homemade tomato-jalapeno salsa, green onion, and mild green chiles. More salsa served on the side.

 

MAINS

From the Grill

Grilled Steak Salad: Juicy marinated flank steak, grilled vegetables, mixed greens, blue cheese, homemade vinaigrette.

*CitrusTarragon Chicken: Juicy chicken breast, legs, or kabobs, marinated in a citrus and herb vinaigrette and grilled to perfection.

Herbed Lamb Kabobs: Tender lamb shoulder marinated overnight in a flavorful herb vinaigrette and grilled to perfection. Served with Mint-Parsley Yogurt Sauce for dipping.

Vegetable Kabobs: Summer Vegetables Marinated in a Homemade Vinaigrette, Tossed with Herbs, and Grilled to Perfection.

International

*Beef Bourguignon: Julia Child it,Certainly one of the most delicious beef dishes ever concocted by man.”Red wine-braised beef with bacon, pearl onions, carrots and garlic.

*Lamb Shepherd’s Pie: Curried ground lamb, peas, carrots, garlic mashed potato topping.

Lemon-Roasted Chicken: Juicy chicken stuffed with lemon and rosemary and roasted to perfection.

Capellini with Summer Vegetable Ragout: Thin strands of pasta tossed with a sauce made from grilled summer vegetables. Available with chicken or shrimp.

*Roasted Eggplant Parmesan: Roasted eggplant layered with mozzarella, Parmesan, tomato sauce, basil, and breadcrumbs and baked until golden.

*Turkey and Artichoke Stuffed Shells: Ground turkey and artichokes in a spicy (or mild) marinara sauce. The kids will never notice these veggies! A Delish Dish Favorite!

*Chicken Enchiladas Verde: Juicy chicken and cheese wrapped in Corn Tortillas and topped with homemade salsa verde and baked until golden. A Delish Dish Favorite!

Pork Carnitas: Braised then fried pork shoulder that’s perfect in tacos, burritos, or tamales.

Cochinita Pibil: A favorite from the Yucatan Peninsula, this is pork for a crowd. Pork shoulder marinated overnight in a lip-smacking marinade of orange juice, lime juice, and spices, and then roasted in banana leaves for flavor unlike any other. Served with pickled red onions and habanero salsa. Serve plain or in tacos. A Delish Dish Favorite! (Minimum 10 guests.)

*Chicken Tikka Masala: A classic Indian dish—juicy grilled chicken in a mild or spicy tomato-cream sauce. (Homemade naan bread also available.) A Delish Dish Favorite!

Saag Paneer: Spinach and paneer (firm Indian cheese) collide in this popular Indian curry.


COLD SIDES AND SALADS

Asparagus Salad: Lemon, white wine vinegar, honey, Dijon mustard.

Caesar Salad: Romaine, Parmesan, homemade croutons and Caesar dressing.

Caprese Salad: Tomato, fresh mozzarella, basil, oil, balsamic reduction.

Pesto Caprese Salad: Tomato, fresh mozzarella, basil, oil, homemade basil-walnut pesto.

*Greek Orzo Salad: Rice-like orzo pasta, feta, tomatoes, olives, cucumber, zesty lemon-parsley dressing.

*Peanut Noodle Salad: Peanuts, peanut butter, ginger, cucumber, red pepper, cilantro, Asian dressing.

*Egg-y Potato Salad: Red potatoes, mayonnaise, hard-boiled eggs, red onion, celery. A truly outstanding potato salad.

Quinoa Salad: Perfect for those with gluten allergies! Quinoa tossed with seasonal vegetables, herbs, and your choice of cheese and nuts.

Spinach Salad: Goat cheese, dried cranberries, toasted pecans, Champagne or balsamic vinaigrette.

Strawberry Salad:  Fresh strawberries, spinach, pecans, white balsamic vinaigrette

Waldorf Salad: Red grapes, green apples, celery, candied pecans, lemon-honey dressing,

 

HOT SIDES

Creamed Summer Corn: Sweet corn, lime, paprika, and chives

Creamy Cole Slaw: A tangy crowd-pleasing slaw.

Eggplant Stacks: Grilled eggplant layered with tomato, fresh mozzarella, and basil, Balsamic reduction, and olive oil.

Garlic Mashed Potatoes: Yukon Gold potatoes mashed with creamy roasted garlic and fresh cream.

Herbed Potatoes: Tender white potatoes sautéd in butter and tossed with fresh herbs.

*Homestyle Mac ‘n’ Cheese: Creamy three-cheese macaroni with crispy corn flake topping.

*New England-Style Baked Beans: No ordinary baked beans here. Navy beans with molasses, maple syrup, bacon, and rum.

*Roasted Red Potatoes: Red potatoes tossed with herbes de Provence and roasted until brown and crispy. Simply delicieux!

*Summer Corn Sauté: Sweet corn, zucchini, shallots, tons of fresh herbs.

*Summer Vegetable Gratin: Tomatoes, squash, and eggplant with a cheese and breadcrumb topping.

*Zucchini Triofalti: Zucchini, lemon, olive oil, and parsley. Simplicity never tasted so good.

 

DESSERTS

Boston Cream Pie: Two layers of yellow sponge cake sandwiched by thick vanilla custard and topped with chocolate ganache.

Classic Carrot Cake with Cream Cheese Frosting

Crostata di Fruta: Italian free-form tart with a sweet crust and seasonal fruit. Available in large or individual sizes.

Dark Chocolate Truffles: Rolled in the topping of your choice.

Double Chocolate Bundt Cake: Moist chocolate caked enrobed in dark chocolate ganache.

Homemade Cookies: Five-Spice Snickerdoodles; Triple-Chocolate Cranberry Oatmeal Cookies; Classic Chocolate Chip Cookies; Caramel-Frosted Brown Sugar Drops.

Homemade Ice Creams: Blueberry Cheesecake; Mango & Roasted Strawberry Sorbet; World’s Darkest Chocolate Ice Cream; Vanilla Bean; Backyard Mint Ice Cream, etc.

Italian Tiramisu: Rum and Espresso-soaked ladyfingers layered with mascarpone custard and whipped cream.
